Mondays have been my day off lately. It’s really turned into pajama day. Thanks goodness for pilates in the evening or I may never leave the house. I’ve only been shopping as needed since I got back from vacation so I’ll eat more fresh veggies. On my way to pilates I stopped and got a few things so as soon as I got home I could make a quick dinner.
This dinner was one of my best curries ever! I looked at the ingredients list on a jar of curry sauce on the store shelf and realized I had everything I need to make my own. So that’s what I did. Crazy easy and super yummy.
1-2t Rogan Josh
1-2T curry powder
1-2t ground cumin
toss in a pot and warm on medium until they are fragrant (about a minute)
then add
3 cloves garlic smashed or pressed
2T fresh minced ginger
1 small can tomato sauce
1/2- 3/4 14z can stewed tomatoes + some of the juice
2T coconut cream powder
1/4 head cauliflower, chopped
1 can baby peas
1 bell pepper, chopped
1/2 acorn squash cubed (baked while I was on my walk earlier)
1/2ish cup heavy cream
simmer while rice cooks
The only thing I’d change is to make it a bit spicier next time, but this will definitely get repeated! Enjoy
I love me some curry! This sounds yummy. We don’t have cream around often but maybe I’ll try this with coconut milk. Thank you!

the only reason I had cream is because of my fudge bender. I’m sure coconut milk will be awesome!

Funny that Monday has become your day off, some of us always have a “blue Monday”.
That curry looks delicious, I’m sure it would go down well with some white rice, Basmati maybe…?

I used what is called Pearl rice, a nice short grain. Basmati would be great!
